Questions
Does cropping lose quality?
Cropping itself does not: the pixels you keep are the pixels you had. Any loss comes from re-saving into a lossy format afterwards, which is why the quality control is there and why keeping the original format is the default.
What does "keep which part" do?
It decides which part survives when the shape changes. Centre suits most pictures; top is usually right for people, because faces sit in the upper half far more often than not, and for screenshots where what matters is at the top.
Can I crop to an exact size in pixels?
Not here — this cuts to a shape and keeps the largest area that fits. To reach an exact pixel size, crop to the right shape and then resize.
